About Us

The Flowing Bowl is the brainchild of husband-and-wife bartending duo Paul Hammond and Priscilla Leong. Paul and Priscilla are award-winning, internationally recognised bartenders and spirits professionals with years of experience designing cocktail programs, training bartenders and leading hospitality teams.

Founded in 2020, The Flowing Bowl emerged as a response to the rising need for accessible cocktails and bar experiences, delivering to an audience that were compelled to remain at home, all while encapsulating the essence of cocktail culture and hospitality.

At its core, The Flowing Bowl embraces the belief that hospitality is the cornerstone of the guest’s journey. Our ethos underscores that a bar’s identity extends beyond the beverages it serves; it calls for purposeful and creative consideration of every facet shaping both the bar and the guest’s experience.

With nearly four decades of collective experience in mixing drinks across some of the most renowned cocktail cities in the world and a reputation earned in several of the World’s 50 Best Bars, Paul and Priscilla have worked at all levels of the business including behind the bar, business ownership, sales distribution, and as brand advocates.

MEET THE PEOPLE

Priscilla Leong

Priscilla Leong is an award-winning Australian bartender and hospitality consultant with a career spanning over two decades working her way across a varied range of drinks markets and roles. From bartending in some of Australia's best laneway bars and hatted restaurants to the quaint tavernas of Greece, and luxury hotel bars in South-east Asia, to introducing and building the brands of beautifully aged spirits from Maison Ferrand and Plantation Rums in Australia, her roots begin in Singapore—a small island city celebrated for its vibrant street fare and mosaic of ethnic cultures. Priscilla brings a unique blend of creativity and diverse perspective to hospitality and cocktails.  

During her tenure at the Baxter Inn (Sydney), Priscilla was the inaugural Australian Speed Rack winner in 2018, a four-time finalist for Australian Bartender of the year and lent her palate as a spirit’s judge for the annual Australian Distilled Spirits Competition. Her varied career experiences and passion for building successful teams laid the groundwork for her role in the delicate rejuvenation of Raffles Hotel Singapore to help lead the food and beverage teams where she made history as the 137-year-old Grand Dame’s first female head bartender.

In 2020, Priscilla along with her husband and industry veteran, Paul Hammond, founded The Flowing Bowl - A boutique creative hospitality consultancy with a mission to connect communities of brands, suppliers, bartenders, and patrons through the curation of events, education, and consultation. Their creative partnership has graced collaborations with illustrious brands such as Chanel, Asia’s 50 Best Restaurants, the Young President’s Organisation, Rémy Cointreau International, and Lexus Australia. Since her return to Melbourne in 2022, she has achieved the title of Australian Bartender of the year at the annual Australian Bar Awards and continues to steer the helm of The Flowing Bowl’s creative projects.

With a curious and adventurous spirit, Priscilla's joy springs from the exploration of historic cities and connecting with the locals. She delves into the local culture through the lens of food and drink, weaving and sharing the rich tapestry of stories that unite people.

Meet Paul Hammond, the Martini aficionado with a passion for Excel and American barbecue. With over 20 years of experience spanning three continents, Paul's career has taken him from small country pubs to fine dining restaurants, luxury hotels and world-renowned cocktail bars in the UK, Singapore and Australia whilst being an integral part of celebrated bars such as 4-time Australian Cocktail Bar of The Year, 5-time World’s 50 Best Bar Bulletin Place (Sydney) and Drinks International’s Best Bar In The World, Milk & Honey (London).

Since moving to Australia in 2008, Paul has been an Australian finalist for Diageo’s World Class consecutively from 2009 to 2018 and Australian Bartender Magazine’s Bartender of the Year from 2015 to 2018. He was also nominated for Best Bar Manager at the Australian Bar Awards and Time Out (Sydney) Awards in 2017 and 2018.

A creative maverick in his own right with a conscientious and methodical approach to formulating cocktail recipes and programs, Paul solidified his role as a leader at Raffles Hotel Singapore where he helped build and manage the beverage programs of the historic hotel’s delicate rejuvenation phase.

In 2020, Paul Hammond together with his wife Priscilla Leong, founded The Flowing Bowl, a creative hospitality consultancy with a mission to connect communities by educating and inspiring through the art of hospitality and curation of brand strategies, beverage concepts and events.

Since his return to Melbourne in 2022, he served as Head of Beverage and Training for The Everleigh Group, which includes awarded venues such as The Everleigh, Bar Margaux and industry favourite, Heartbreaker. After overseeing the launch of Connie’s Italian Diner, his role with the group has evolved into the Product Development Manager for The Everleigh Bottling Co. where he manages the research and development of their line of ready-to-drink cocktails.

For Priscilla and Paul, it embodies the essence of mindful and wholehearted hospitality, delivered in abundance; the seamless flow of conversation, laughter, and, of course, meticulously crafted libations, because cocktails aren’t just about what's in the glass, but a part of celebrating life, any day, anywhere. We believe that cocktails are more than just drinks – they are expressions of creativity, a moment in time and personal style.

Today, as a creative drinks and hospitality consultancy, The Flowing Bowl remains committed to the spirit of Omotenashi and a mission to bridge the gap between brands, suppliers, bartenders, and customers through the curation of events, education, and consultation. Our services extend to implementing successful bar systems, aiding in event planning, concept development, team training, and all facets that contribute to preserving and celebrating cocktail culture that celebrates the individual and the everyday.
